Description
These pancakes combine the soft texture of classic pancakes with the sweet, spicy swirl of a cinnamon roll, finished with cream cheese frosting.

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- Cream cheese frosting (for serving)
Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry mix and combine until just blended.
- In a small bowl, mix the ground cinnamon and brown sugar to create the cinnamon swirl.
- Heat a non-stick skillet over medium heat and lightly grease if needed.
- Pour 1/4 cup of pancake batter onto the skillet for each pancake.
- Drizzle a small amount of the cinnamon mixture on top of the batter.
- Use a toothpick or knife to gently swirl the cinnamon into the pancake batter.
- Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown.
- Serve pancakes warm with cream cheese frosting drizzled on top.

Serve with fresh berries, sliced bananas, or a side of bacon for a delicious brunch.
