Description

A cozy and satisfying soup made with browned beef, sweet vegetables, and tangy tomatoes, perfect for weeknight meals.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen peas
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat. Chop the onion, dice the carrots and celery, and mince the garlic.
  2. Add the chopped onion, diced carrots, and diced celery to the pot. Sauté until the vegetables soften.
  3. Add the ground beef, break it up, and cook until browned. Drain excessive fat.
  4. Pour in the beef broth and diced tomatoes. Stir in frozen peas, oregano, and season with salt and pepper. Bring to a boil then simmer for about 20 minutes.
  5. Taste and adjust seasoning. Serve hot, garnished with fresh parsley if desired.

Notes

To brighten the soup, consider adding a teaspoon of vinegar or lemon juice at the end.
