- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen peas
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat 2 tablespoons olive oil in a large pot over medium heat. Chop the onion, dice the carrots and celery, and mince the garlic.
- Add the chopped onion, diced carrots, and diced celery to the pot. Sauté until the vegetables soften.
- Add the ground beef, break it up, and cook until browned. Drain excessive fat.
- Pour in the beef broth and diced tomatoes. Stir in frozen peas, oregano, and season with salt and pepper. Bring to a boil then simmer for about 20 minutes.
- Taste and adjust seasoning. Serve hot, garnished with fresh parsley if desired.
Notes
To brighten the soup, consider adding a teaspoon of vinegar or lemon juice at the end.
