Description

A vibrant, nutritious salad that combines earthy lentils, crisp vegetables, and a tangy dressing, perfect for lunch or dinner.


Ingredients

  • 1 cup green or brown lentils
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 cucumber, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cool water to remove any debris. Then, cook them in a pot of boiling water for about 20-25 minutes or until they are tender but not mushy. Once cooked, drain the lentils and let them cool.
  2. In a large bowl, combine the cooled lentils, diced onion, chopped tomatoes, cucumber, and parsley. Stir well to ensure everything is evenly distributed.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a flavorful dressing.
  4. Pour the dressing over the salad and gently toss everything together until well coated. Serve the salad chilled or at room temperature for the best flavor.

Notes
