- 1 cup green or brown lentils
- 1 onion, diced
- 2 tomatoes, chopped
- 1 cucumber, diced
- 1/4 cup parsley, chopped
- 1/4 cup olive oil

Instructions
- Rinse the lentils under cool water to remove any debris. Then, cook them in a pot of boiling water for about 20-25 minutes or until they are tender but not mushy. Once cooked, drain the lentils and let them cool.
- In a large bowl, combine the cooled lentils, diced onion, chopped tomatoes, cucumber, and parsley. Stir well to ensure everything is evenly distributed.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a flavorful dressing.
- Pour the dressing over the salad and gently toss everything together until well coated. Serve the salad chilled or at room temperature for the best flavor.
