Instructions
- Preheat your oven to 170°C (340°F) and grease a loaf pan or line it with parchment paper.
- Cream together the softened butter and caster sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
- Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and bake for about 50-60 minutes, or until a skewer inserted comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
