- 1 pound boneless, skinless chicken breasts
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 package (1 ounce) ranch seasoning mix
- 1 package (1 ounce) taco seasoning mix
- 1 cup chicken broth
- 1 cup cream cheese
- 1 cup shredded cheese (cheddar or Mexican blend)
- Chopped green onions or cilantro for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- Add the black beans, corn, diced tomatoes, ranch seasoning, taco seasoning, and chicken broth. Stir to combine everything well.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and fully cooked.
- Shred the chicken directly in the slow cooker using two forks. Stir in the cream cheese until it melts and is well combined. Sprinkle the shredded cheese on top and let it melt before serving.
