Description

A comforting blend of chicken, mushrooms, and spinach that warms the heart and soul. Perfect for a light lunch or dinner.


Ingredients

  • 2 chicken breasts, chopped
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley) for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions and minced garlic to the pot. Sauté until onions are soft and translucent, about 3-4 minutes.
  3. Incorporate the chopped chicken into the pot. Cook until browned, about 5-6 minutes.
  4. Stir in the sliced mushrooms and continue to cook for another 5 minutes.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Add spinach, salt, and pepper. Cook for an additional 5 minutes until spinach has wilted.
  7. Serve the soup hot, garnished with fresh herbs.

For a richer broth, consider using homemade chicken broth. Feel free to experiment with different vegetables.
