- 2 chicken breasts, chopped
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups spinach
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (thyme or parsley) for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onions and minced garlic to the pot. Sauté until onions are soft and translucent, about 3-4 minutes.
- Incorporate the chopped chicken into the pot. Cook until browned, about 5-6 minutes.
- Stir in the sliced mushrooms and continue to cook for another 5 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Add spinach, salt, and pepper. Cook for an additional 5 minutes until spinach has wilted.
- Serve the soup hot, garnished with fresh herbs.
Notes
For a richer broth, consider using homemade chicken broth. Feel free to experiment with different vegetables.
