Description

A bright and easy salad that brings the flavors of a classic club sandwich together with pasta, making it a perfect dish for picnics and potlucks.


Ingredients

Scale
  • 8 ounces pasta
  • 4 slices bacon, cooked and crumbled
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • Salt and pepper to taste
  • Lettuce leaves for garnish

Instructions

  1. Prepare all ingredients by halving cherry tomatoes, dicing cucumber and chicken, and crumbling bacon.
  2. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  3. In a large bowl, combine cooled pasta, bacon, chicken, tomatoes, and cucumber.
  4. In a small bowl, whisk together mayonnaise, mustard, salt, and pepper. Pour over pasta mixture and toss gently to coat.
  5. Adjust seasoning and serve on a bed of lettuce. Chill for 20-30 minutes if desired.

Notes

This salad can be made a few hours in advance and stored, but it’s best served fresh. Reserve some dressing to add before serving if storing overnight.
