A bright and easy salad that brings the flavors of a classic club sandwich together with pasta, making it a perfect dish for picnics and potlucks.
Ingredients

- 8 ounces pasta
- 4 slices bacon, cooked and crumbled
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- Salt and pepper to taste
- Lettuce leaves for garnish
Instructions
- Prepare all ingredients by halving cherry tomatoes, dicing cucumber and chicken, and crumbling bacon.
- Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine cooled pasta, bacon, chicken, tomatoes, and cucumber.
- In a small bowl, whisk together mayonnaise, mustard, salt, and pepper. Pour over pasta mixture and toss gently to coat.
- Adjust seasoning and serve on a bed of lettuce. Chill for 20-30 minutes if desired.
Notes
This salad can be made a few hours in advance and stored, but it’s best served fresh. Reserve some dressing to add before serving if storing overnight.
