Ingredients

  • 1 cup desiccated coconut
  • 1/2 cup sweetened condensed milk
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a bowl, mix the desiccated coconut, sweetened condensed milk, vanilla extract, and a pinch of salt until well combined.
  2. Take small amounts of the mixture and roll them into small balls, then place them on a baking sheet lined with parchment paper.
  3. Refrigerate the coconut balls for about 30 minutes to firm up, making them easier to dip in chocolate.
  4. While the balls are chilling, melt the chocolate chips either in a microwave or using a double boiler until smooth.
  5. Once the coconut balls are firm, dip each one into the melted chocolate, coating them completely before letting any excess drip off.
  6. Place the chocolate-covered balls back on the baking sheet and refrigerate until the chocolate has fully set.
