- 1 cup desiccated coconut
- 1/2 cup sweetened condensed milk
- 1 cup semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a bowl, mix the desiccated coconut, sweetened condensed milk, vanilla extract, and a pinch of salt until well combined.
- Take small amounts of the mixture and roll them into small balls, then place them on a baking sheet lined with parchment paper.
- Refrigerate the coconut balls for about 30 minutes to firm up, making them easier to dip in chocolate.
- While the balls are chilling, melt the chocolate chips either in a microwave or using a double boiler until smooth.
- Once the coconut balls are firm, dip each one into the melted chocolate, coating them completely before letting any excess drip off.
- Place the chocolate-covered balls back on the baking sheet and refrigerate until the chocolate has fully set.
