Ingredients

  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coffee granules
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the softened butter, powdered sugar, and granulated sugar until creamy.
  3. Add the egg, vanilla extract, and coffee granules, and mix until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on a wire rack before serving.
