Description

Surprising fudgy brownies made with cottage cheese for a protein boost and a tender, moist crumb.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Combine the cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, eggs, and vanilla extract in a mixing bowl (or a blender).
  3. Mix until the batter is smooth and uniform, scraping the bowl as needed.
  4. Stir in the almond flour, baking powder, and salt until well combined.
  5. Pour the batter into the prepared pan and smooth the top. Sprinkle chocolate chips or nuts on top if using.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool the brownies in the pan for at least 15 minutes, then lift out using the parchment edges or invert onto a rack. Let cool fully, cut into 9 squares, and serve.

Notes

Serve warm with vanilla ice cream or fresh berries for a delightful dessert.
