Surprising fudgy brownies made with cottage cheese for a protein boost and a tender, moist crumb.

- 1 cup cottage cheese
- 1/2 cup unsweetened cocoa powder
- 1/2 cup honey or maple syrup
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: chocolate chips or nuts for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- Combine the cottage cheese, cocoa powder, honey or maple syrup, melted coconut oil, eggs, and vanilla extract in a mixing bowl (or a blender).
- Mix until the batter is smooth and uniform, scraping the bowl as needed.
- Stir in the almond flour, baking powder, and salt until well combined.
- Pour the batter into the prepared pan and smooth the top. Sprinkle chocolate chips or nuts on top if using.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool the brownies in the pan for at least 15 minutes, then lift out using the parchment edges or invert onto a rack. Let cool fully, cut into 9 squares, and serve.
Notes
Serve warm with vanilla ice cream or fresh berries for a delightful dessert.
