Description

Soft and tender cookies with a slight tang, enriched with cottage cheese and perfect with chocolate chips or mix-ins.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a silicone mat. Optional: Pulse the cottage cheese in a food processor for 10–15 seconds.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the cottage cheese, then mix in the eggs and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips if desired.
  4. Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 12–15 minutes until edges are golden brown and the centers are set but still soft.
  5. Let the cookies cool on the baking sheet for 3-5 minutes then transfer to a wire rack to cool completely.

Notes

For a smoother texture, pulse cottage cheese in a food processor. Chill dough for 20–30 minutes before baking for thicker cookies.
