Description

A quick and creamy dessert using cottage cheese for a smooth, slightly tangy treat that melts on the tongue.

Ingredients

Scale
  • 2 cups cottage cheese
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • Pinch of salt

Instructions

  1. Measure all ingredients. Let the cottage cheese sit at room temperature for 10 minutes if you want an extra-smooth texture. Place your ice cream maker bowl in the freezer if required.
  2. In a blender, combine the cottage cheese, milk, sugar, vanilla extract, heavy cream, and a pinch of salt. Secure the lid.
  3. Blend until the mixture is smooth and creamy, scraping the sides to ensure no lumps remain.
  4. Pour the blended mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 15–25 minutes until it reaches soft-serve consistency.
  5. Transfer the churned ice cream to a shallow, airtight container. Smooth the top, cover, and freeze until firm, about 4 hours.
  6. Serve scoops and enjoy!

Notes

For extra smoothness, press the blended mixture through a fine mesh strainer before churning. Store in an airtight container to prevent ice crystals.
