Description

Moist, chocolatey brownies with a protein boost from cottage cheese. These fudgy treats are perfect for a healthier dessert.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl (or in a blender), combine the cottage cheese, honey or maple syrup, eggs, and vanilla extract. Blend or whisk until smooth.
  3. In another bowl, whisk together the cocoa powder, almond flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 20–25 minutes, testing with a toothpick in the center for moist crumbs.
  7. Let the brownies cool in the pan on a wire rack for at least 20 minutes, then cut into 9 squares.

Notes

Serve warm or at room temperature. They pair well with Greek yogurt, fresh berries, or a scoop of vanilla ice cream.
