Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 1 cup corn kernels (fresh or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Oil for frying

Instructions

  1. In a large bowl, combine the cottage cheese, chopped spinach, corn, flour, Parmesan cheese, baking powder, salt, and pepper. Mix well until everything is evenly coated.
  2. Add the beaten eggs into the mixture and stir until it is well combined. The mixture should be thick and hold together.
  3. Heat oil in a frying pan over medium heat. Once the oil is hot, drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
  4. Cook until the fritters are golden brown on both sides, about 3-4 minutes per side. Once cooked, remove the fritters from the pan and drain them on paper towels to remove excess oil. Serve warm with your choice of dipping sauce.
