- 1 cup cottage cheese
- 2 cups fresh spinach, chopped
- 1 cup corn kernels (fresh or canned)
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- 2 eggs, beaten
- Oil for frying
Instructions
- In a large bowl, combine the cottage cheese, chopped spinach, corn, flour, Parmesan cheese, baking powder, salt, and pepper. Mix well until everything is evenly coated.
- Add the beaten eggs into the mixture and stir until it is well combined. The mixture should be thick and hold together.
- Heat oil in a frying pan over medium heat. Once the oil is hot, drop spoonfuls of the mixture into the hot oil, flattening them slightly with the back of the spoon.
- Cook until the fritters are golden brown on both sides, about 3-4 minutes per side. Once cooked, remove the fritters from the pan and drain them on paper towels to remove excess oil. Serve warm with your choice of dipping sauce.
