- 2 cups cottage cheese
- 1 cup chopped spinach
- 1 cup chopped bell peppers
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 eggs
- 1 cup breadcrumbs
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish with oil or butter. Chop the spinach, bell peppers, and tomatoes.
- In a large mixing bowl, combine cottage cheese, chopped spinach, chopped bell peppers, diced tomatoes, shredded cheese, eggs, breadcrumbs, garlic powder, onion powder, and salt and pepper. Stir until well combined.
- Pour the mixture into the greased baking dish and level it. Bake for 30–35 minutes until the top is golden brown and the center is set.
- Remove from the oven and let cool for 5–10 minutes before slicing. Serve warm.
Notes
Store in an airtight container for up to 4 days or freeze for up to 2 months. Add fresh herbs or vary vegetables and proteins to customize.
