- 3–4 pounds beef roast
- 1 cup cranberry sauce
- 1/2 cup balsamic vinegar
- 1/2 cup beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh rosemary or thyme for garnish
Instructions
- Preheat the oven to 325°F (165°C).
- In a bowl, combine the cranberry sauce, balsamic vinegar, beef broth, chopped onion, and minced garlic.
- Season the beef roast with salt and pepper, place it in a roasting pan, and pour the cranberry mixture over it. Cover with foil and roast for about 3 hours.
- Remove foil for the last 30 minutes to allow browning.
- Let the roast rest for 10-15 minutes before slicing and garnish with herbs.
Notes
For best flavor, use a well-marbled cut of beef. Consider marinating the beef for extra flavor.
