Instructions
- In a saucepan, combine cranberries and sugar. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and let cool.
- In a large bowl, beat the mascarpone cheese until smooth.
- In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the mascarpone cheese until well combined.
- Add the cooled cranberry mixture and lemon juice, folding gently to create a swirled mousse.
- Spoon the mousse into cups and refrigerate for at least 2 hours.
- Garnish with mint leaves if desired before serving.
