Ingredients

  • 1/2 cup sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Mint leaves (for garnish, optional)

Instructions

  1. In a saucepan, combine cranberries and sugar. Cook over medium heat until the cranberries burst and the mixture thickens, about 10 minutes. Remove from heat and let cool.
  2. In a large bowl, beat the mascarpone cheese until smooth.
  3. In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
  4. Gently fold the whipped cream into the mascarpone cheese until well combined.
  5. Add the cooled cranberry mixture and lemon juice, folding gently to create a swirled mousse.
  6. Spoon the mousse into cups and refrigerate for at least 2 hours.
