A hearty casserole combining pierogi and beef kielbasa in a rich, creamy sauce, perfect for busy weeknights.
Ingredients

- 1 pound beef kielbasa, sliced
- 1 bag frozen pierogi (about 16 ounces)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a crockpot, layer the sliced kielbasa and frozen pierogi. Make sure the ingredients are evenly distributed.
- In a bowl, mix together the sour cream, cheddar cheese, chopped onion, minced garlic, paprika, salt, and pepper.
- Pour the cheese mixture over the ingredients in the crockpot. Stir to combine.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes until the pierogi are tender. Serve hot, garnished with chopped green onions.
Notes
Can use turkey or vegetarian sausage as a lighter alternative. Add chopped bell peppers or spinach for extra nutrition.
