A warm and soothing creamy chickpea soup that’s rich in flavor and easy to make.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and cumin to the pot and cook for another minute until fragrant.
- Stir in the rinsed chickpeas and vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for about 10 minutes.
- Add in the coconut milk and blend the soup until smooth using an immersion blender. Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
Notes
Consider adding a splash of lemon juice for brightness or topping with toasted nuts for added texture.
