Description

A light and creamy dressing that combines cottage cheese, Parmesan, and lemon for a flavorful twist on classic Caesar dressing, perfect for salads and dips.


Ingredients

Scale
  • 1 cup cottage cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 anchovy fillets (optional)
  • 1 teaspoon Dijon mustard

Instructions

  1. In a blender or food processor, add the cottage cheese, lemon juice, Worcestershire sauce, minced garlic, salt, and black pepper. Secure the lid.
  2. Blend the mixture until smooth and creamy. Stop and scrape down the sides if needed.
  3. With the motor running on low, slowly drizzle in the olive oil. Continue blending until the dressing becomes glossy and well combined.
  4. If using, add the anchovy fillets and Dijon mustard. Blend again until fully smooth. Taste and adjust salt, pepper, or lemon as needed. Serve immediately or refrigerate.

Notes

For a thinner dressing, add a little water, milk, or extra lemon juice a teaspoon at a time. Stir before serving as separation may occur.
