Description

A hearty and satisfying soup combining Southwest flavors with creamy goodness, perfect for chilly nights.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it apart until no longer pink. Drain excess grease.
  2. Add the chopped onion and minced garlic; sauté until the onion becomes soft and translucent, about 3-5 minutes.
  3. Stir in the diced tomatoes, black beans, corn, and beef broth. Add chili powder, cumin, salt, and pepper. Bring to a gentle simmer.
  4. Reduce heat to low and stir in the heavy cream. Warm through without boiling. Garnish with chopped cilantro before serving.

Notes

Serve warm with crusty bread or cornbread for a complete meal. Can be made ahead and stored for up to 3 days in the fridge.
