Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 2 cups beef broth
- 1 cup heavy cream
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, brown the ground beef over medium heat, breaking it apart until no longer pink. Drain excess grease.
- Add the chopped onion and minced garlic; sauté until the onion becomes soft and translucent, about 3-5 minutes.
- Stir in the diced tomatoes, black beans, corn, and beef broth. Add chili powder, cumin, salt, and pepper. Bring to a gentle simmer.
- Reduce heat to low and stir in the heavy cream. Warm through without boiling. Garnish with chopped cilantro before serving.
Notes
Serve warm with crusty bread or cornbread for a complete meal. Can be made ahead and stored for up to 3 days in the fridge.
