Description

A delightful creamy pasta dish that combines orzo, broccoli, and cheddar cheese, perfect for busy weeknights or cozy weekends.


Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup cheddar cheese, grated
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Incorporate the orzo pasta into the pot and stir to coat it in the oil, allowing it to absorb the garlic flavor.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Add the broccoli florets to the pot, cover, and reduce heat to a simmer. Cook for about 10-12 minutes or until the orzo is tender and most of the broth is absorbed.
  5. Stir in the heavy cream and grated cheddar cheese until melted and creamy. Season with salt and pepper to taste.
  6. Serve this warm and comforting dish right away.

Notes

For stronger flavor, use vegetable broth with herbs. Can substitute with other small pasta shapes. For a vegan version, use coconut cream and nutritional yeast.
