- 1 cup orzo pasta
- 2 cups broccoli florets
- 4 cups vegetable broth
- 1 cup cheddar cheese, grated
- 1/2 cup heavy cream
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Incorporate the orzo pasta into the pot and stir to coat it in the oil, allowing it to absorb the garlic flavor.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the broccoli florets to the pot, cover, and reduce heat to a simmer. Cook for about 10-12 minutes or until the orzo is tender and most of the broth is absorbed.
- Stir in the heavy cream and grated cheddar cheese until melted and creamy. Season with salt and pepper to taste.
- Serve this warm and comforting dish right away.
Notes
For stronger flavor, use vegetable broth with herbs. Can substitute with other small pasta shapes. For a vegan version, use coconut cream and nutritional yeast.
