A deliciously satisfying dish featuring tender potatoes, juicy chicken, and a creamy ranch dressing, perfect for picnics and potlucks.

Ingredients

Scale
  • 2 cups cooked chicken, diced
  • 4 cups potatoes, peeled and cubed
  • 1 cup celery, diced
  • 1/2 cup red onion, diced
  • 1 cup mayonnaise
  • 1/2 cup ranch dressing
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (e.g., parsley or dill)

Instructions

  1. Boil the cubed potatoes in salted water until they are tender, about 15 minutes. Drain and let cool completely.
  2. In a large bowl, combine diced chicken, cooled potatoes, diced celery, and red onion.
  3. In a separate bowl, mix together mayonnaise, ranch dressing, lemon juice, salt, and pepper.
  4. Pour the dressing over the chicken and potato mixture and gently stir to combine. Adjust seasoning if necessary.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh herbs if desired.

Notes

Use rotisserie chicken for quicker prep. Substitute Greek yogurt for a healthier twist.
