- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced

- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the cherry tomatoes to the skillet and cook until they start to soften, about 2-3 minutes.
- Stir in the fresh spinach and cook until wilted, then pour in the heavy cream, salt, and pepper; bring the mixture to a gentle simmer. Add the cooked tortellini and grated Parmesan cheese, tossing to combine. Cook for an additional 2-3 minutes until heated through.
- Serve warm, garnished with fresh basil if desired.
