Description

Ingredients

  • 1 cup fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the cherry tomatoes to the skillet and cook until they start to soften, about 2-3 minutes.
  4. Stir in the fresh spinach and cook until wilted, then pour in the heavy cream, salt, and pepper; bring the mixture to a gentle simmer. Add the cooked tortellini and grated Parmesan cheese, tossing to combine. Cook for an additional 2-3 minutes until heated through.
  5. Serve warm, garnished with fresh basil if desired.
