  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a baking dish with olive oil.
  2. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the mixed winter vegetables to the skillet and cook until slightly tender, about 5-7 minutes.
  4. In a mixing bowl, combine heavy cream, vegetable broth, thyme, salt, and pepper. Stir in the sautéed vegetables and half of the shredded cheese.
