- 1 cup heavy cream
- 1 cup vegetable broth

- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a baking dish with olive oil.
- In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the mixed winter vegetables to the skillet and cook until slightly tender, about 5-7 minutes.
- In a mixing bowl, combine heavy cream, vegetable broth, thyme, salt, and pepper. Stir in the sautéed vegetables and half of the shredded cheese.
- Transfer the mixture to the prepared baking dish, top with the remaining cheese, and breadcrumbs if desired. Bake for 25-30 minutes until bubbly and golden.
