Crispy chicken taquitos are a simple and satisfying snack or meal, featuring a savory filling with a hint of spice and melty cheese.

- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup salsa
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Vegetable oil for frying
- Sour cream for serving
- Guacamole for serving
Instructions
- Warm the tortillas so they are flexible, either in a dry skillet or wrapped in a damp paper towel in the microwave.
- In a bowl, mix together the shredded chicken, cheese, salsa, cumin, salt, and pepper. Adjust seasoning to taste.
- Place a few tablespoons of the chicken mixture on each tortilla near one edge. Roll tightly and secure with a toothpick if needed.
- Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until shimmering. Carefully place the taquitos seam-side down and fry until golden brown on each side, about 3–4 minutes.
- Remove taquitos from the oil and drain on paper towels. Serve hot with sour cream and guacamole on the side.
Notes
For a lighter option, brush with oil and bake at 425°F (220°C) for 12–15 minutes instead of frying.
