Crispy Rice Squares are a quick, nostalgic treat with a light crunch and a chewy center, perfect for an after-school snack or simple party treat.

- 3 cups crispy rice cereal
- 1 cup mini marshmallows
- 3 tablespoons unsalted butter
- 1/2 cup chocolate chips (optional)
- 1/4 cup peanut butter (optional)
Instructions
- Grease a 9×13-inch pan lightly with butter or nonstick spray, or line it with parchment for easy removal. Measure out all ingredients.
- In a large saucepan over low heat, melt the butter slowly, stirring to avoid browning. Add the mini marshmallows and stir until melted and smooth.
- Remove from heat and immediately add the crispy rice cereal, stirring until evenly coated. If using, fold in chocolate chips and/or peanut butter.
- Transfer the mixture to the greased pan and press down firmly. Allow to cool completely at room temperature (about 30–45 minutes) before cutting into squares.
Notes
For softer bars, press gently and reduce cooking time; for firmer bars, press more firmly and use slightly less cereal. Adding vanilla extract can enhance flavor.
