- 4 chicken breasts
- 1 onion, sliced
- 1 bell pepper, sliced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat. Sear the chicken breasts for 3-4 minutes on each side until browned.
- Place the seared chicken in the crockpot and top with sliced onions, bell peppers, and minced garlic.
- Pour in the diced tomatoes and chicken broth. Sprinkle oregano, basil, salt, and pepper over the mixture and stir gently to combine.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender. Garnish with fresh parsley before serving.
Notes
Serve over rice, pasta, or polenta. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
