Description

A comforting and delicious Italian-inspired dish featuring tender chicken cooked in a rich, flavorful sauce.


Ingredients

  • 4 chicken breasts
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat. Sear the chicken breasts for 3-4 minutes on each side until browned.
  2. Place the seared chicken in the crockpot and top with sliced onions, bell peppers, and minced garlic.
  3. Pour in the diced tomatoes and chicken broth. Sprinkle oregano, basil, salt, and pepper over the mixture and stir gently to combine.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender. Garnish with fresh parsley before serving.

Serve over rice, pasta, or polenta. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
