Description

A flavorful, comforting meal that combines tender chicken with vibrant vegetables and hearty rice, all prepared in a single crockpot.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup frozen peas and carrots
  • 4 cups chicken broth
  • 3 green onions, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a crockpot, add the diced chicken breast, cooked rice, frozen peas and carrots, and chopped green onions.
  2. In a separate bowl, whisk together the chicken broth, minced garlic, soy sauce, sesame oil, salt, and pepper until well combined.
  3. Pour the mixture into the crockpot over the chicken and rice. Stir to combine all the ingredients evenly.
  4. Cover the crockpot and cook on low for 4-6 hours or until the chicken is cooked through. Stir well before serving to ensure even distribution of flavors.

Notes

For added flavor, consider marinating your chicken in soy sauce for 30 minutes prior to cooking. Customize vegetables based on what you have on hand.
