- 1 pound boneless, skinless chicken breasts
- 1 can (15 ounces) white beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup spinach or kale, chopped
- Juice of 1 lemon
Instructions
- Place the chicken breasts in the crockpot.
- Add the white beans, diced tomatoes, chicken broth, onion, garlic, oregano, cumin, paprika, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the crockpot, then stir in the chopped spinach or kale and lemon juice.
Notes
For added flavor, sear the chicken before adding it to the crockpot. You can adjust the seasoning based on your preference and add other vegetables for extra nutrition.
