Description

Ingredients

  • 1 lb cooked turkey, shredded
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. In a crockpot, combine the shredded turkey, rice, onion, carrots, celery, chicken broth, diced tomatoes, garlic powder, and thyme.
  2. Stir the ingredients well to ensure everything is evenly distributed. Season with salt and pepper according to your taste preferences.
  3. Cover the crockpot and set it to cook on low for 6-8 hours. Check periodically; the soup is done when the rice and vegetables are tender.
  4. About 30 minutes before serving, add the frozen peas. Stir everything together and taste; adjust seasoning if necessary.
