Ingredients

- 1 cup cooked quinoa
- 1 cup grated carrots
- 1/2 cup finely chopped bell pepper
- 1/2 cup chopped spinach
- 1/4 cup breadcrumbs
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 egg (or flax egg for vegan option)
- Oil for frying
Instructions
- In a large bowl, combine the cooked quinoa, grated carrots, finely chopped bell pepper, chopped spinach, breadcrumbs, chopped onion, minced garlic, cumin, salt, and pepper. Stir until the mixture looks evenly combined.
- Add the egg (or flax egg) and mix until well incorporated. Press a small amount together in your hand; it should hold its shape.
- Form the mixture into patties, about 2-3 inches wide. Heat oil in a skillet over medium heat and add the patties. Cook for about 4-5 minutes on each side until golden brown.
- Transfer cooked patties to a wire rack or paper towel to drain briefly. Serve warm with your favorite dip or sauce.
Notes
Chill formed patties for 15-20 minutes before frying to reduce breakage. For extra crunch, roll patties in panko before frying.
