- 1 cucumber, diced
- 1 avocado, diced
- 1 cup broccoli florets, steamed
- 1/4 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prep the vegetables: wash and dice the cucumber and avocado. Thinly slice the red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until smooth.
- Steam broccoli florets for 2-3 minutes until bright and tender.
- Combine cucumber, avocado, steamed broccoli, and red onion in a large bowl. Pour dressing over and toss gently to coat. Serve immediately.
