Description

A fresh and light Cucumber Salad with tender crab meat in a creamy lemon-mayo dressing, perfect for quick lunches and potlucks.


Ingredients

  • 2 cups of cucumber, thinly sliced
  • 1 cup of crab meat, shredded
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of mayonnaise
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the cucumber, crab meat, and red onion.
  2. In a separate bowl, mix the mayonnaise, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the cucumber and crab mixture and toss gently to combine.
  4. Garnish with fresh parsley and chill for at least 30 minutes before serving.
