Ingredients

- 2 cups of cucumber, thinly sliced
- 1 cup of crab meat, shredded
- 1/4 cup of red onion, finely chopped
- 1/4 cup of mayonnaise
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the cucumber, crab meat, and red onion.
- In a separate bowl, mix the mayonnaise, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the cucumber and crab mixture and toss gently to combine.
- Garnish with fresh parsley and chill for at least 30 minutes before serving.
Notes
Keep cucumbers dry and use English or seedless cucumbers to avoid excess water.
