Description

Warm and comforting baked oatmeal with a cinnamon and vanilla aroma; perfect for breakfast or brunch.


Ingredients

  • 2 cups rolled oats
  • 1 cup milk (or a non-dairy alternative)
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup (optional)
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped nuts (e.g. walnuts or almonds)
  • 1/2 cup dried fruit (e.g. raisins or cranberries)
  • Fresh fruit for topping (e.g. bananas or berries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a large bowl, combine oats, baking powder, and cinnamon. In another bowl, whisk together milk, eggs, brown sugar, maple syrup, and vanilla until smooth. Pour the wet mixture into the dry mix and stir lightly. Fold in nuts and dried fruit.
  3. Transfer the mixture to the baking dish and spread evenly. Bake for 30–35 minutes until golden and set in the center.
  4. Cool for 5–10 minutes before serving. Top with fresh fruit and optional milk or maple syrup.

Notes

Best served warm, and great for meal prep. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
