Description

A cozy breakfast treat that combines the sweet tang of fresh blueberries and zesty lemon, perfect for any morning gathering.

Ingredients

Scale
  • 1 loaf of bread (such as challah or brioche)
  • 6 large eggs
  • 2 cups milk
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • Zest of 1 lemon
  • Powdered sugar (for serving)

Instructions

  1. Grease a baking dish and cube the loaf of bread into small pieces. Place the bread cubes in the baking dish and sprinkle blueberries over the top.
  2. In a mixing bowl, whisk together eggs, milk, lemon juice, vanilla extract, cinnamon, sugar, and lemon zest until well combined.
  3. Pour the egg mixture evenly over the bread and blueberries. Press down gently to ensure the bread absorbs the liquid.
  4. Cover the dish with plastic wrap and refrigerate overnight.
  5. The next morning, preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for 40-45 minutes, or until it’s puffed and golden brown.
  6. Let cool slightly before serving, then dust with powdered sugar.

Notes

Use stale bread for the best texture; experiment with different bread types for unique flavors. Consider adding nuts or spices for variation.
