Description
A cozy breakfast treat that combines the sweet tang of fresh blueberries and zesty lemon, perfect for any morning gathering.
Ingredients
Scale
- 1 loaf of bread (such as challah or brioche)
- 6 large eggs
- 2 cups milk
- 1 cup blueberries (fresh or frozen)
- 1/2 cup lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 cup sugar
- Zest of 1 lemon
- Powdered sugar (for serving)
Instructions
- Grease a baking dish and cube the loaf of bread into small pieces. Place the bread cubes in the baking dish and sprinkle blueberries over the top.
- In a mixing bowl, whisk together eggs, milk, lemon juice, vanilla extract, cinnamon, sugar, and lemon zest until well combined.
- Pour the egg mixture evenly over the bread and blueberries. Press down gently to ensure the bread absorbs the liquid.
- Cover the dish with plastic wrap and refrigerate overnight.
- The next morning, preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the casserole for 40-45 minutes, or until it’s puffed and golden brown.
- Let cool slightly before serving, then dust with powdered sugar.
Notes
Use stale bread for the best texture; experiment with different bread types for unique flavors. Consider adding nuts or spices for variation.
