- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 3 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes on each side until browned.
- Place the browned chicken in the slow cooker. Add cherry tomatoes, spinach, garlic, Italian seasoning, salt, and pepper. Stir gently to combine.
- Pour heavy cream over the mixture and sprinkle with Parmesan cheese. Cover and cook on low for 5-6 hours or high for 3-4 hours.
- Once cooked, serve over pasta or rice and enjoy with additional Parmesan or a squeeze of lemon.
Notes
For extra flavor, marinate the chicken in olive oil and lemon juice before cooking. Substitute heavy cream with coconut milk for a lighter version.
