Description

A bright, tropical soft-serve treat made with just four ingredients, capturing the sweet and tangy flavor of fresh pineapple.


Ingredients

  • 2 cups pineapple chunks (frozen)
  • 1/2 cup coconut milk
  • 1/4 cup sugar
  • 1 tsp lemon juice

Instructions

  1. Preparation: Measure the frozen pineapple, coconut milk, sugar, and lemon juice. If the pineapple chunks are in a large block, break them up slightly for easier blending.
  2. Mixing: Place the frozen pineapple, coconut milk, sugar, and lemon juice in the blender. Secure the lid and blend starting on low, then increase speed until smooth.
  3. Cooking: Blend until creamy; this recipe requires no heat. Stop to scrape down the sides as needed.
  4. Finishing: Check texture; if too thick, add a splash of coconut milk. Taste and adjust sweetness or acidity as desired. Serve immediately or freeze for 30-60 minutes for a firmer texture.

Notes

Serve in chilled cups, garnished with a pineapple wedge or maraschino cherry. Can be blended with mango for variation, and is easily customizable.
