Description

A delightful treat that combines rich spices with juniper berries, topped with a luscious cinnamon molasses frosting. Perfect for holiday celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground juniper berries
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 2 large eggs
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, nutmeg, juniper, and salt.
  3. In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the molasses and eggs, mixing well.
  4. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until everything is nicely combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely before frosting it with cinnamon molasses frosting.
