- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground juniper berries
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup molasses
- 2 large eggs
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, nutmeg, juniper, and salt.
- In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Add in the molasses and eggs, mixing well.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until everything is nicely combined.
- Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before frosting it with cinnamon molasses frosting.
