Description

A simple one-pan meal featuring juicy baked chicken, fluffy rice, and cool, tangy tzatziki, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 1 lb chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a medium baking dish.
  2. Spread the rice in the dish and pour the chicken broth over it. Place chicken on top and cover with tzatziki sauce. Scatter tomatoes and cucumber around.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Cover with foil and bake for 30–35 minutes until chicken reaches 165°F (74°C).
  5. Let rest for 5 minutes before serving. Fluff rice and garnish with dill.

Notes

For a crispier top, remove foil for the last 5-8 minutes of baking. Use low-sodium broth for less sodium.
