Description

Crispy, golden Easy Breakfast Potatoes are the perfect side dish for any morning meal.


Ingredients

  • 4 medium potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Wash and dice the potatoes.
  2. In a bowl, combine the diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
  3. Spread potatoes on a baking sheet in a single layer. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
  4. Remove from oven, sprinkle with parsley if desired, and serve hot.

For ideal crispiness, avoid overcrowding the baking sheet and consider using Russet or Yukon Gold potatoes.
