Description
A simple, satisfying weeknight meal featuring tender baked chicken on a bed of zucchini and sweet cherry tomatoes, topped with melted mozzarella.

- 2 chicken breasts
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish or spray with oil. Pat the chicken breasts dry with paper towels and season with salt, pepper, and a sprinkle of Italian seasoning.
- In the baking dish, toss the sliced zucchini and halved cherry tomatoes with the olive oil. Sprinkle vegetables with garlic powder, salt, pepper, and Italian seasoning. Spread in an even layer.
- Place the seasoned chicken breasts on top of the vegetables. Cover the dish tightly with aluminum foil and bake for 25–30 minutes, until chicken is nearly cooked through and vegetables are tender.
- Remove foil, sprinkle shredded mozzarella over chicken and vegetables. Bake uncovered for an additional 10 minutes, until cheese is melted and bubbly and chicken reaches 165°F (74°C). Let rest a few minutes, then serve warm.
Notes
For a golden top, switch to broil for 1–2 minutes at the end — watch closely to avoid burning. Serve with a green salad or steamed rice.
