Description

A simple, cozy weeknight meal with tender chicken, zucchini, cherry tomatoes, and melted mozzarella.


Ingredients

  • 2 chicken breasts, diced
  • 2 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry and dice into bite-size pieces. Slice the zucchini and halve the cherry tomatoes.
  3. In a large bowl, combine the diced chicken, sliced zucchini, halved cherry tomatoes, Italian seasoning, salt, pepper, and olive oil. Toss well.
  4. Transfer the mixture to a baking dish in a single layer. Bake for 25–30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Sprinkle the shredded mozzarella cheese evenly on top and return the dish to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.
  6. Remove from the oven and let sit for a few minutes before serving.

Notes

This dish pairs well with a light green salad, cauliflower rice, or crusty bread. Garnish with fresh basil for added flavor.
