Description

A festive and easy-to-make traybake that combines the classic flavors of Christmas cake, perfect for sharing during holiday gatherings.


Ingredients

Scale
  • 250g unsalted butter, softened
  • 250g granulated sugar
  • 4 large eggs
  • 250g self-raising flour
  • 100g dried mixed fruits
  • 100g glacé cherries, halved
  • 1 tsp mixed spice powder
  • 100g marzipan
  • 200g icing sugar
  • 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 160°C (320°F) and grease a traybake tin, lining the bottom with baking paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time.
  3. Sift in the self-raising flour and mixed spice powder, then fold in gently. Add dried mixed fruits and halved glacé cherries and mix evenly.
  4. Pour the batter into the prepared tin and smooth the top. Bake for 30-35 minutes or until a skewer comes out clean. Let it cool completely in the tin.
  5. Once cooled, cover with a layer of marzipan. Mix icing sugar and lemon juice to form a smooth consistency, spreading it over the marzipan. Cut into squares for serving.

Notes

Store in an airtight container at room temperature for up to 5 days, or refrigerate for 1-2 weeks. Freeze for up to 3 months.
