A festive and easy-to-make traybake that combines the classic flavors of Christmas cake, perfect for sharing during holiday gatherings.

- 250g unsalted butter, softened
- 250g granulated sugar
- 4 large eggs
- 250g self-raising flour
- 100g dried mixed fruits
- 100g glacé cherries, halved
- 1 tsp mixed spice powder
- 100g marzipan
- 200g icing sugar
- 2 tbsp lemon juice
Instructions
- Preheat the oven to 160°C (320°F) and grease a traybake tin, lining the bottom with baking paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time.
- Sift in the self-raising flour and mixed spice powder, then fold in gently. Add dried mixed fruits and halved glacé cherries and mix evenly.
- Pour the batter into the prepared tin and smooth the top. Bake for 30-35 minutes or until a skewer comes out clean. Let it cool completely in the tin.
- Once cooled, cover with a layer of marzipan. Mix icing sugar and lemon juice to form a smooth consistency, spreading it over the marzipan. Cut into squares for serving.
Notes
Store in an airtight container at room temperature for up to 5 days, or refrigerate for 1-2 weeks. Freeze for up to 3 months.
