- 1 boneless pork loin roast
- 2 cups stuffing mix
- 1/2 cup chicken broth
- 1/2 cup dried cranberries
- 1/2 cup chopped apples
- 1 tsp sage
- 1 tsp thyme
- Salt and pepper to taste
- Olive oil for roasting
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the stuffing mix with chicken broth, dried cranberries, chopped apples, sage, thyme, salt, and pepper. Stir until well-incorporated.
- Carefully cut a pocket in the pork loin roast and stuff it with the stuffing mixture.
- Coat the outside of the roast with olive oil and season with salt and pepper. Place in a roasting pan and cook for about 90 minutes, until the internal temperature reaches 145°F (63°C).
- Let the roast rest for 10 minutes before slicing.
