Description

Ingredients

  • 1 boneless pork loin roast
  • 2 cups stuffing mix
  • 1/2 cup chicken broth
  • 1/2 cup dried cranberries
  • 1/2 cup chopped apples
  • 1 tsp sage
  • 1 tsp thyme
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the stuffing mix with chicken broth, dried cranberries, chopped apples, sage, thyme, salt, and pepper. Stir until well-incorporated.
  3. Carefully cut a pocket in the pork loin roast and stuff it with the stuffing mixture.
  4. Coat the outside of the roast with olive oil and season with salt and pepper. Place in a roasting pan and cook for about 90 minutes, until the internal temperature reaches 145°F (63°C).
  5. Let the roast rest for 10 minutes before slicing.

Notes

Use a thermometer to check doneness and let the roast rest for optimal tenderness.
