- 1 cup cottage cheese
- 1/2 cup lemon juice
- 1/4 cup honey or sugar
- 1 teaspoon vanilla extract
- 1/2 cup whipped cream
- Zest of 1 lemon
Instructions
- Measure all ingredients. Zest the lemon and squeeze enough for 1/2 cup lemon juice. Let cottage cheese sit at room temperature for 10 minutes for smoother texture.
- In a blender, combine cottage cheese, lemon juice, honey (or sugar), and vanilla extract. Blend until smooth, about 30–60 seconds.
- Transfer the mixture to a bowl and let cool briefly. Gently fold in whipped cream and lemon zest until combined.
- Spoon the mousse into serving dishes. Refrigerate for at least 1 hour. Serve chilled, garnished with extra lemon zest or berries.
Notes
For best results, use a high-speed blender for a silky texture. Chill for at least 1 hour for flavors to meld.
