- 1 pound boneless, skinless chicken breasts
- 1 can (14.5 ounces) diced tomatoes
- 1 cup chicken broth
- 1 tablespoon Italian seasoning
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Place the chicken breasts in the crockpot.
- Add the diced tomatoes, chicken broth, Italian seasoning, and minced garlic into the crockpot.
- Cover and cook on low for 6-8 hours or until the chicken is cooked through and shreds easily with a fork.
- Remove the chicken, shred it finely, and return it to the crockpot. Stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste. Serve hot, garnished with fresh basil.
Notes
For a thicker soup, add more cheese or reduce the broth. Experiment with different cheeses for varied flavors.
