- 2 cups cooked quinoa
- 2 chicken breasts, diced
- 4 cloves garlic, minced
- 1 lemon, juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the diced chicken dry with paper towels and season lightly with salt and pepper. Mince the garlic and juice the lemon. Have the cooked quinoa measured and at room temperature or gently warmed.
- Combine the cooked quinoa and lemon juice in a bowl and stir briefly to distribute the lemon flavor.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute. Add the diced chicken and cook, stirring occasionally, until golden brown and no longer pink, about 8–10 minutes. Stir in the cooked quinoa and cook for another 1–2 minutes until warmed through.
- Taste and season with additional salt and pepper if needed. Remove from heat and garnish with chopped fresh parsley. Serve hot.
Notes
Serve with a crisp green salad or roasted vegetables. For added creaminess, consider a dollop of plain yogurt or tahini.
