- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- ¼ cup gin
- ½ cup molasses
- ¼ cup milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and cloves.
- In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the gin, molasses, milk, and vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Fill the cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
