Description

These Easy Gin Gingerbread Cupcakes bring a fun twist to the classic holiday flavor profile, infused with spices and a hint of gin.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • ¼ cup gin
  • ½ cup molasses
  • ¼ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then add the gin, molasses, milk, and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fill the cupcake liners about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Store leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
