Ingredients

Scale
  • 2 mackerel fish, cleaned and scaled
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse the mackerel and pat it dry; drizzle olive oil and rub it into the skin and cavity.
  3. Season with salt, pepper, and dried oregano, stuffing each cavity with minced garlic and lemon slices.
  4. Place the mackerel on the baking sheet and bake for 20–25 minutes until the flesh flakes easily and the skin is crisp.
  5. Let the fish rest for 2–3 minutes, then garnish with parsley and serve immediately.
